I also like the dark knight idea.. I think that it would be cool if the dark knight character (as a bonus) would be "less" detectable(due to his similar evilness) by monsters as compared to a normal character. Maybe even be able to walk right up to lesser monsters and not be noticed until his first strike.

As far as killing demons is concerned, a chaotic evil character would kill whatever and ally with whatever as long as it furthered his goal.

paladins have a dark side, it's just a matter of perspective. think about how members of the Zakarum are seen by most npcs in D2. they are seen as annoyances. they are looked upon like witch-hunters and fire-and-brimstone preachers would be looked at. they are seen as evil hidden by a cloak of "good deeds"
so a dark knight would seem a bit odd. WoW can pull the idea off nicely because WoW paladins are basically as good as good gets. (except for blood elf paladins, who "bend" the light to their will) but to have a "dark" without a "light" would be kinda strange. in D2 Pallys and Necros sorta balance eachother out, since they are both misunderstood and have a the whole "light and dark" staple, but since D3 doesn't seem to have a necro, and the Witchdoctor isn't exactly seen as automatically good or evil, i can't see the whole dark knight thing happening.
unless by "dark knight" you mean "Batman." i'd love to play a Batman class..
