There is a fat ugly woman at a bar, and no guy wants her. But even when a guy does want her, she turns him down because she is too good for him. She is contradicting herself. How? She believes herself to be much better than she is and that is why she is fat and ugly and alone.

A paradox is an ultimate logical contradiction. What you brought up is not a paradox at all. It's just a common life situation, which are plenty, and paradoxes are impossible, and can't be plenty because they don't make sense.

Paradox is more like traveling back in time and becoming your own grandfather, or going back in time and teaching someone a song you learned from them in the present.

You usually have to create a paradox, more often than not by employing the use of time travel to alter history, either your's or the world's, not throw a few words together than contradict each other.
Or alternatively you make an alternative universe at the same time someone in that universe creates your universe. As evident in the Futurama episode, The Farnsworth Parabox.
A paradox can be a contradictory statement, but it's more that two opposing words, it's usually a full sentence, such as "I always lie". Because if it is true it must be false.
