I was requested by people to recommend the easiest Set Dungeons to do, especially for the Seasonal Journey, so I've gone through each of the classes and ranked them based on my own personal experience. Note that depending on how comfortable you are with the class and set, as well as gear and RNG in the Set Dungeons, your experiences may vary!

Yeah in terms of difficulty, Jade Harvester is by far the hardest of the Witch Doctor Set Dungeons, probably in the top 3-4 in terms of difficulty (of all the Set Dungeons).

Have a look at the following build guide. If you've never played Vyrs before, you need to get used to the rotation of resetting the cooldown on Archon. If you're really low on damage, you may require the Fazula's Improbable Chain Belt and/or Swami Wizard Hat in order to have a high Archon stack count. As mentioned above, you really don't need ancient Chantodos for this, you're probably just missing an item to help you keep your stacks up.
While I found the Vyrs Set Dungeon to be pretty simple, it is only because I played Vyrs in Patch 2.3 when it was the strongest Wizard build. It has a very particular playstyle which takes some practice to get used to and for you to know which rotations and skills to cast. I actually used a 2.3 patch Fazula's Chain so it only started with 20 stacks instead of up to 50 that the current 2.4 patch Fazula's Chain provides.
At the very least you need the Fazula's Chain and an Obsidian Ring of the Zodiac on top of the Vyrs set, then you need to learn to Arcane Torrent on top of monsters to reset the cooldown of Archon. I'm not sure on whether you need the Chantodo's Set as well or if the damage is sufficient without it. You also generally need to gain some Arcane Power somewhere and have some cooldown reduction on your gear, so it's not as easy as you think it to be, I'd rank it as a middle difficulty set dungeon, made slightly easier if you have someone helping you.
I really have no idea why Blizzard decided to let people assist you with Set Dungeons so I never recommend it in my videos, but even if someone is assisting, you still need to get 300 kills yourself in Archon, so you can't just let someone else kill stuff for you.
I definitely rank Tal Rashas as easier to Master than Vyrs, you don't need any specific additional gear outside the main Tal Rasha's Pieces, and you can just spam 4 different skills. The only thing that makes it difficult is the unpredictability of the Rockworms that pop up out of nowhere.
Yeah I'd imagine it'd be more of grind earlier on in the season.
I've yet to try out Lord Greenstone's Fan, but the other issue is that I play on Hardcore as well, and you probably don't want to be allowing that many monsters getting too close to you without strong defensive stats and probably using something like the new Elusive Ring. It sounds like its definitely a viable option in Softcore though!
As Bagstone mentioned above, the Conquest isn't going to be simple at the start of the season, you're going to need a few ancient items (definitely on the Yang's Recurve), optimised items with damage rolls, higher paragons and higher level gems will help to complete this. I've edited the 3rd gem choice from Gogok to Bane of the Powerful (I didn't realise the damage drop off would be so high, although I did attempt this at a fairly high paragon last season). Bane of the Stricken would also be an option if you're struggling with the Rift Guardian.
It sounds like a strong Hellfire Amulet with a damage passive (Ambush would be the best passive) to get monsters to the 50-60% Dead Man's Legacy double hit might also help. Make sure to cast your Companion Wolf active ability before the Fire Rotation of the Convention of Elements comes around as well to maximise your damage.
If you're playing Softcore or feel like survivability isn't an issue, you could give up Unity and go with Obsidian Ring of the Zodiac, while will allow you to cast Companion more often, and possibly use Preparation - Punishment Rune to spam Multishot more, at the cost of having less mobility from not being able to Vault as much.
I've had really bad luck with drops on my Demon Hunter so far, so I ended up doing the Conquest on my Crusader, but if I end up getting the required gear I'll test it out further.
Yeah I recommended reducing the damage you deal for the Earth Set, it just helps you get a '2nd chance' at going through your rotation if you are unlucky and two elites spawn close to each other.
Achievements are known to be bugged at the moment, there was a Blizzard post at the front page about it. You should always manually check your achievements to confirm it's been completed
Jade Harvester has invisible monsters (Writhing Deceivers). This makes it really frustrating as you can't see them on the mini map until you kill a certain amount of monsters and the map is also one of the longest of the Set Dungeons in terms of the distance you need to run.
That's why in the build guide, I recommend using a speed set (either Manajumas Set with Hex - Chicken Rune, or Shukrani's Triumph with Spirit Walk - Severance Rune). Clear through to the end of the map until the monster show on the minimap, then backtrack to find the invisible monsters. Watch the video as well to get an idea of the path you need to take as it is a long map. If you are still struggling, post in the build comments and I can help you further!
This is an update from the previous patch 2.3 build that I made for this Conquest. I've rolled a Crusader this season as my first character so I'm still in the process of gathering Demon Hunter gear, but the points I've updated should stay valid.
I'm not sure on the Focus/Restraint question but I'm siding towards no you can't use it based on the wording of the Conquest.
Welcome to my Set Dungeons Build Guides and Videos!
You can find general information and Set Dungeon guides for the other classes at my Set Dungeon Thread.
This thread lists the builds for each Crusader Set Dungeon and associated Mastery requirements, and each build has an attached Video of the Mastery clear. As I did the Mastery clears for these Set Dungeons in Seasons, I was missing a lot of gear and wasn't very optimised, so the videos attached may not necessarily reflect what I feel is the best build (especially in the case of the Akkhans Set Dungeon) and I'm happy to take advice on improving the builds.
Difficulty - Hardest to Easiest based on my own experiences (your own attempts may vary!)
Invoker
Light
Akkhan
Rolands

To clarify, you need to complete the rift in time (within 15 minutes).
