The armour DOES adjust to the class. There's a concept piece that shows a visual progression for a Witchdoctor from light to medium and heavy armour etc. Very much alike the old D2 concept piece showing the visual progression for a Barbarian.
It's also hinted by Jay Wilson once or twice - I believe he explained for a Blizzcast how armour models can't be reused across classes and genders as it is done in WoW to a degree, so they need to come up with a lot more resources.
On the other hand, weapon models should be unique and same no matter what class is wielding it, since that doesn't interfere with the class distinction philosophy, and the 3D engine allows it.
